It had been over a year since I last made potjiekos, a traditional South African dish consisting of layered meat, potatoes, veggies and spices all slowly cooked in a pot (the potjie) over a fire. I used stewing lamb as my meat in this potjie. My coals may have been a touch too hot and so the stew cooked faster than recommended, but it was still a delicious meal! :) 
Throughout West Africa, Europe, South Africa, the USA, and the South Atlantic Ocean. Our adventure continues as we seek God's will for our life after Mercy Ships.

- I am a 40-year-old South African whose journey with Mercy Ships began in 2007 when I joined the M/V "Africa Mercy" in Liberia. I met my wife Candace in Sierra Leone in 2011 and together we served with Mercy Ships until December 2012. We worked with Mercy Vision in South Africa during 2013, and are now settled with our three kiddos in the USA.
